Goal

Students will investigate different areas from around the world and how their cultures, environments, and traditions have affected their food choices. We will explore many different countries’ cuisine styles, learn about their cooking equipment, practice cooking techniques and trying new foods and seasoning. Within this study students will spend 3 weeks exploring Asian Cuisine within the 3 regions, South West, North East, South East

What will be done with my students

Students enrolled in Culinary/Hospitality and Tourism classes at New Smyrna Beach Middle School will actively study the Asian Cuisine. Focusing on many different aspects such as: Wok and Bamboo Steamer Cooking (stir-frying, steaming, boiling, braising, stewing). Students will learn how the Wok and Bamboo Steamer became important to Asian Cuisine and the many dishes you can make with these cooking tools. They will learn the proper care and cooking techniques each tool requires.
CTE06.02: Identify and demonstrate the proper safe use and care of culinary tools.
CTE07.05: Demonstrate recipe conversions
CTE09.01: Identify factors that affect menu planning, i.e. seasons, cultural influences, environment, trends, and technology
CTE14.06: Analyze the relationship between resources and attainment of lifestyle.
 

 

Benefits to my students

Students will explore through hands on activities the Asian Culinary world. In hopes to encourage some students to continue their education or possible choose a career within the Culinary field, but for all to better understand the world around us and how our environment cultures, and traditions create who we are. Ultimately to help create a future generation of students with more empathy and compassion due to a better understanding of other people and their ways of life.
